Joliet’s Elder Brewing and Milano Bakery collaborated to create an Easter surprise in the form of a beer brewed with potica pastries.
Potica is a traditional Eastern European nut roll made of a thinly rolled dough with walnut filling. The Joliet businesses used seven loafs of potica in the brewing process.
“The flavor of the potica matched the style of the brown ale,” said Andrew Polykandriotis, owner and head brewer
Polly said he named the beer “My Friend Frank,” after the bunny-suit-wearing character from the 2001 movie “Donnie Darko.”
Darin DeBenedetti, vice president and owner of Milano Bakery, said his wife’s Italian grandmother 30 years ago traded a lasagna recipe for the bakery’s current potica recipe.
“Food is what we’re all about,” DeBenedetti, said.
