The tomato soup has a nice "bite" at the end, due to garlic and fresh fennel. The sandwiches add flavor contrast – mellow cheese, hearty pumpernickel and sweet apple jelly. We modified both recipes from the Food Network.

Tomato Soup with Monster Sandwiches
1 1/2 tablespoon olive oil
1/2 fennel bulb, chopped
½ large onion, chopped
5 to 6 small cloves garlic, smashed
Salt and pepper to taste
1 28-oz can plum tomatoes
16 ounce box vegetable broth
3 small cans tomato juice
1 tablespoon dried Italian seasoning
Juice of 1/2 lemon juice
1 slice Muenster cheese for each sandwich
1 slice Cheddar cheese for each sandwich
