Los Campesinos targets lunch crowd in Minooka

Mexican restuarant opens on Ridge Road

Los Campesinos Mexican Grill is not Felipe Rebollo's first restaurant in the area, but he said he saw an opportunity in Minooka.

"We saw Minooka doesn't have a good sit-down Mexican restaurant," Rebollo said. In late February, the doors opened at Los Campesinos at 104 Ridge Road.

On Thursday, he held a ribbon cutting with local officials and representatives from the Grundy County Chamber of Commerce and Industry. To celebrate, the restaurant offered half-off on margaritas that day.

Rebollo also operates La Fondita Mexican Grill in Ottawa, along with another restaurant in downstate Mahomet.

He said the restaurant specializes in fajitas and burritos. But while the menu is made up of traditional Mexican favorites like tacos, quesadillas and margaritas, Rebollo said he also wants to target a specific group — the lunch crowd.

He said the restaurant will be providing fast service during lunch hours to make sure people can get in and out and back to work during their normal lunch break.

"You should be able to get in and out in 30 minutes," Rebollo said.

The new restaurant also offers an option to carry food out, according to its Facebook page.

Los Campesinos is open 11 a.m. to 9 p.m. every day, except for Fridays and Saturdays, when it stays open until 10 p.m. For more information, call 815-255-2588.
