Easy Vanilla Ice Cream (pictured above)
Note: For those who like a custardy ice cream.
3 quarts milk
2 ½ pounds powdered sugar
12 eggs, well beaten
1 vanilla bean, split
2 quarts cream
Mix everything but the vanilla bean in a metal bowl, then add vanilla. Put the pail in a kettle of boiling water and stir constantly until the custard is quite thick. Cool, add cream, and freeze.

1 quart milk
1 ½ tablespoons arrowroot
Sugar, to taste
2 lemons, juice and grated peel
1 quart thick cream
Wet the arrowroot with a little cold milk. Boil the milk, then add arrowroot. Sweeten it with sugar. It must be very sweet, as it loses much by freezing. Add lemon peel, boil, then strain it into the cream. Partly freeze, then add the lemon juice.
