Looking for new fish recipes this Lent?
Try this quick and easy recipe for fresh salmon that my chef son Timothy Baran “lent” me.
Salmon is high in protein, full of B vitamins and minerals (including potassium). The presence of omega-3 fatty acids in salmon is thought to contribute to a healthy heart, brain and joints.
½ T. olive oil
24 salmon pieces
T tablespoon salt/black pepper
4 ounces butter
2 tablespoon shallots, minced
6 garlic cloves, smashed
2 teaspoons thyme leaves
Heat sauté pan, add oil.
When oil ripples in pan, add in salmon. Sauté in batches of eight.
When a nice crust develops flip salmon.
Cook for an additional 30 seconds and add in butter, shallots, garlic and thyme leaves. Baste fish.
